Roasted Pepper And Almond Romesco
Romesco is a Catalan sauce with a nut and a piece of fried bread doing the thickening that a roux or a cream would do elsewhere.
Everything in it is toasted, roasted or fried before it is blended, which is why a raw-tasting romesco is nearly always a rushed one.

Romesco is a sauce built on two toasted things: the almonds and the bread. Skip either and it turns into a thin pepper puree.
It improves overnight, which is unusual for a sauce with raw garlic in it.
