Lemon Tahini Vinaigrette

Tahini does something alarming when liquid first hits it: it thickens and splits.

Keep whisking and adding water in small amounts and it turns into a pale, glossy dressing.

Add water a spoonful at a time; too much at once and it never emulsifies properly.

Thickens in the fridge, so expect to loosen it again before serving.
