Multi Seed Tamari Crackers
A seed cracker is held together by nothing but the gel that chia and flax throw off in water, which makes it one of the few crackers with no flour in it at all.
The technique is simple and the two failure points are both impatience: rolling too thick, and breaking it while warm.

There is no flour holding these together. The chia and flax form a gel in water that sets around the seeds, which is why the twenty-minute rest is not optional.
Rolled thin they shatter; rolled thick they bend. Thin is worth the effort.
