Smoky Cashew Queso

The texture target is pourable but coating — thick enough to cling to a chip, thin enough not to snap it.

It thickens noticeably as it cools, so stop while it still looks slightly loose.

Warm it gently before serving and loosen with a splash of water.

Doubles easily for a crowd.
