Mango Lime Sorbet

Sorbet is a sugar-ratio problem disguised as a fruit recipe.

Too little sugar and it freezes to a solid brick; too much and it never sets at all.

Blending the frozen cubes a second time is what makes it smooth without a machine.

Ripe mango matters more than any technique here.
