Tamarind And Lime Agua Fresca
Agua fresca made with tamarind is sour, sweet and slightly savoury at once, and the balance between those three is set entirely at the end.
The only real work is getting the pulp off the seeds, and warm water does most of it if given twenty minutes.

Tamarind pulp has to be worked apart with the fingers in warm water. No amount of stirring with a spoon will separate it from its fibres and seeds.
The pinch of salt is what makes it taste like agua fresca rather than sweetened fruit water.
