Tomato Basil Bruschetta

Bruschetta has nowhere to hide — it is tomatoes, bread and oil.

Out-of-season tomatoes cannot be rescued by technique, so make this when they are worth making.

Salt the tomatoes and drain them; the released liquid is what makes bruschetta soggy.
