The wrapper should still be firm when it leaves the water; it keeps softening on the board while you fill it.

Herb leaves go in face down against the wrapper so they read through it once the roll is turned over.

Roll two before you roll twenty — the first one always tears and tells you how wet the wrapper should be.

They are best within an hour of rolling and unrecoverable the next day.
