Phytates — phytic acid and its salts — are the storage form of phosphorus in beans, whole grains, nuts, and seeds, and they have become a favorite villain in corners of the internet that label whole plant foods as "antinutrient" traps. The mainstream nutrition reading is far calmer: phytates modestly reduce absorption of minerals like iron and zinc in the same meal, everyday cooking already reduces them, and the foods that contain them are consistently linked with better health outcomes, not worse.
