Golden Turmeric Oat Latte

A turmeric latte is an infusion rather than a mixture: the spices need time in warm milk to give anything up.

Eight minutes below a simmer does what two minutes at a boil cannot, and it does it without wrecking the oat milk.

The black pepper is not seasoning and it is not optional. Without it the turmeric passes through largely unabsorbed, and a quarter teaspoon is enough to change that.

Simmered rather than boiled: oat milk that reaches a rolling boil turns thin and slightly slimy.
