Mushroom Bourguignon

Mushrooms give up an astonishing amount of water, and anything crowded into the pan boils in it instead of browning.

The braise should finish thick enough to coat the back of a spoon and hold a line drawn through it.

It tastes better the next day, once the vinegar has settled into the background.
